Carrot Cake

    • 3 large eggs
    • 1 cup vegetable oil
    • 2 cups brown sugar
    • 2 teaspoons vanilla extract
    • 2 cups plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 2 teaspoons cinnamon
    • 2 cups grated carrots
    • 1 cup chopped walnuts

    Cream Cheese topping Ingredients

    • 1/2 cup unsalted butter
    • 250g cream cheese
    • 2 cups caster sugar

    For this recipe preheat the oven to 180 degrees C or 350 F. It’s recommended you use an electric whisker, it’ll make the process alot more easier!

    Directions

    1. Whisk the eggs, vegetable oil, sugar and vanilla extract until smooth.
    2. Sieve in the flour, baking soda, baking powder, cinammon and salt
    3. Stir in carrots and walnuts
    4. Bake in oven for 40 to 50 minutes in a greased cake pan.
    5. For the frosting, whisk the butter, cheese and sugar until smooth.
    6. Once the cake is ready allow to cool on rack
    7. Spread the frosting evenly on cooled cake
    8. Serve
